The TF recipe for the month of May had to be a local recipe from Cordoba, of course. Therefore, in the month of flowers and the month of the caliphal city, Estrella Ruiz Campos brings us a Cordoba style pork cheek piece on this original handmade ceramic tableware in the shape of a traditional Cordoba hat. Torres Ferreras has made it in different versions for different restaurants.

Ingredients
- 1 kg of Iberian pork cheeks
- 1 red pepper
- 1 large ripe tomato
- 1 onion
- 3 garlic cloves
- 1 bay leaf
- 150 cl of EVOO
- 125 cl of local Montilla-Moriles wine
- Salt and pepper to taste
Elaboration:
- Take out the grease from the pork cheeks and rinse them well, then drain.
- Wash the vegetables, peel them and cut them into small pieces.
- In a large pot, add the EVOO and sauté the chopped garlic, onion, pepper and tomato.
- Once the sauce is ready, add the pork cheeks to the pot and sauté.
- When they are golden, add the bay leaf, salt and pepper.
- When the contents of the pot are boiling over high heat, add the wine and leave the pot open so that it evaporates.
- When it has evaporated, add water until all the ingredients in the pot are covered, then cover the pot and leave it on low heat. If we are using a quick cooker, leave it for about 20 minutes. In a slow cooker, it will be approximately an hour.
- When the pork cheeks are tender, turn to high heat and remove the lid to reduce the sauce.
- When it is ready, serve it on this wonderful stoneware plate from Torres Ferreras with some potatoes to taste and sing “El Vito” (a traditional song from Cordoba).
